Each edition starts with a 2-course dinner cooked by Olivier Lieshout (Masterchef). Following that, there’s a demonstration and product tasting by a fermentation specialist, usually the chairperson of the Blub Club and fermentation guru Ivana Mik. We conclude with a fermented drink and the opportunity to taste the experiments of other participants.

We explore everything from tepache to tempeh and from cheese to koji. This edition will focus on chocolate. Many people don’t know that cocoa must be fermented before it can be turned into a chocolate bar. Even more people don’t know that truly delicious chocolate exists. Quality you won’t find in the supermarket; akin to fine wine or exceptional cider. During this edition, we’ll learn how the chocolate fermentation process works and taste various chocolates from small-scale producers who experiment with fermentation.

Market Central is only accessible via our train, the Market Central Express. It departs from the gate of the Food Center Amsterdam at Jan van Galenstraat 6. The train runs between 6:30 PM and 7:00 PM. For latecomers, we show no mercy.

We offer different ticket options. Each ticket includes food and 3 drinks.

€25.00 – First-time Visitor
For anyone who has never been to the Blub Club before, we have a specially priced ticket. Come and explore, be tempted by layered flavors, and meet fellow fermenters.

€55.00 – Single Visit
This ticket is for the fermentation fan who has been before but prefers no commitments and wants to join occasionally.

€250.00 – 5-Ticket
For the consistent enthusiast! This ticket allows you to come and learn about fermentation five times. Upon using this ticket, you will receive additional instructions via email.

The Centrale Markthal is wheelchair accessible, and there is also an accessible toilet in the hall. Unfortunately, the train is not wheelchair accessible. If you are coming with a wheelchair, please let us know in advance. We will register you with the porter of the Food Center Amsterdam.

Cancellation up to three days (72 hours) before the Blub Club is possible with a refund of the paid amount, minus €2 per person. Cancellations within 72 hours of the Blub Club, including for ticket holders of the 5-Ticket, unfortunately, cannot be refunded.
